What if instead of remaining Zoroastrian, Iran became Muslim? How would it's society differ from reality? Personally, I think the Persians would alter Islam greatly to the point where whatever offshoot or denomination of Islam they end up with it unrecognizable from the Islamic Genesis.

The Persians I know are pretty proud of their old culture, they'd never accept becoming the cultural appendage of what they think are "just desert nomads".

I agree plus in Zoroastrianism their got a faith every bit as autocratic and centralised as any of the Abrahamic religions. As such they won't give that up because some desert nomads seek to impose their own upstart faith on them.
Also while the Arab tribes often have good light cavalry raiders the Persians are experts at both horse archers and heavy shock cavalry themselves. There's no way they will be defeated by disparate raiding mobs.
