I keep on hearing that Ethiopia was the only country in africa not to be colonized by a foreign country. But Ethiopia was a part of the Italian colonial empire. What am I missing?

That depends on what "colonization means". If it means that the local peoples submitted to foreign rule, then Ethiopia might claim it resisted "colonization" by armed resistance throughout the Italian occupation.

ok, Colonization means that Italians sent settlers to establish political dominance in every region of ethiopia

The general statement was that Ethiopia was the only nation not to be colonized, or at least under foreign protection during the general period of the scramble for Africa prior to 1914. However as you say, although it defeated an Italian attempt to conquer it in 1896, see here. However it was then conquered by fascist Italy in 1936.

And the League of Nations protested, albeit no more. Hence, you could say that they wanted to keep Ethiopia uncolonized.
