You are all over the place with this, first talking about Carter then Mondale of all people!
John Hinckley aimed to kill the sitting president, whomever that may be. He stalked Carter leading up to the election in late 1980 and then settled on Reagan after his win. VP Mondale wouldn't have been considered. To win the heart he desired, the madman was chasing the president.

I think insects point is that if Hinckley successfully killed Carter prior to the election would there be enough of a sympathy vote for the Democrats and the dead Carter that as a result that Reagan is defeated? Assuming that in the case of a Presidential candidate killed very shortly before the election his VP automatically steps up, rather than the election being delayed.
I would suspect not as Reagan had gathered a lot of momentum and press support and Carter had taken some difficult economic decisions which had hurt his popularity while there was still the hostage crisis.

Reagan won 44 states and by 10% of the popular vote. That would have to be one hell of a lot of "sympathy" to turn the election the Democrats way. And even if Carter was assassinated, there would still be the 52 hostages in Iran and election day would still be one year exactly since their seizure.

In the meantime, I suppose we get President Mondale who runs again in 1980. Given Stagflation and the ongoing Iranian hostage crisis, how does Mondale handle these, and would he still get quashed by Governor Gipper? Because I'm not sure if a year is enough time for Mondale to stabilize either of these.
