Well that destroys the empire/republic so not a lot for those death stars to do other than wage war on each other. Unless there are planets for other races that are unaffected?

A handful of unaffected ones, I think, such as the example first seen in The Book of Boba Fett. (Beware spoilers, if you mind those.)
However, even if actual use of the new Death Stars is minimal, I assume it'd be a mass-death scenario to replace planets with moon-sized battle stations without breathable atmospheres, natural resources, and other provisions needed for a functional planetary society. Heck, replacing Coruscant alone would probably consign trillions of people to death via the cold vacuum of space, unless there's some provision to house them inside the new Death Star or relocate them to the remaining "safe areas" (which will still be overcrowded). |
